Twice Baked Potatoes

Tonight my roommate made twice baked potatoes. I had all but forgotten about these little gems, and she had an amazing twist on them. Now here is how we did it in my family:

Bake your potatoes first (wash them, toss them in oil and sea salt before wrapping them in foil to bake for about an hour).

Once they are cooled, cut about 1/4 off the top lengthwise and scoop out the innards into a bowl. Mash them up with a little butter, some sour cream, cheddar cheese, bacon bits, and chives. Mix it all in and then load it back into the potato skins. Toss some extra cheese on the top and load them back into the oven for 15-20 minutes at 400 degrees. YUM-A-ROO!!!

My roommate got her recipe from the Food Network - The Neely's Twice Baked Potatoes. They had spinach (or swiss chard), garlic, ricotta cheese, Parmesan cheese and dried chili peppers as part of the filling.... SO YUMMY!!!!!

A Quickie Favourite

One of my favourite things to make is pasta. I've tried (and succeeded) to move to whole wheat pasta so that it's not so bad for me. On Sundays, I often cook up whatever I am going to eat all week and then package it into individual servings in my fridge. Today, I went with a quick favourite:

I boiled some water (salted and with olive oil) on the stove and threw in my pasta. When it was almost cooked, I threw in a bag of frozen, peeled and deveined shrimp and a bunch of fresh broccoli. When it was done, I drained it and tossed in some dill and Italian seasoning. Yum!!
